Cosmic Verve in a Grounded Italian Liter…From the Alps to the Mediterranean!
Sfera is a small collaboration with organic growers found all over Italy from the Alps to the Mediterranean. The wine is batched in small runs, allowing Sfera to collab with a multitude of different growers.
This Bianco is a fruit-forward, medium-bodied white with notes of green apple, peach, and pineapple. With its refreshing acidity, it pairs well with roast chicken, pizza, seafood, and hard Italian cheeses.
The vineyard is located in the village of Saint-Bris, slightly south-west of Chablis. The vines are around 65 years old and they were planted for Cecile Gueguen's mother, Marie Louise (hence the name of the cuvée).
Serve this as an apperitif, with white meat, shellfish, fish sauce, ham, chicken, cheese, such as Epoisses, Langres.

Ripe strawberry, red apple & candied red fruit flavors are tamed by a gentle dryness and complexity. We’re loving the texture that unfining and unfiltering bring to this bottle, not to mention the fantastic packaging and the fact that it comes from a woman winemaker.
SFERA is an incredible collaboration of like-minded small organic growers who bottle their limited-run wines in 1 liter crown-cap editions. As a co-ferment, SFERA boasts exciting varietals - this year’s edition featuring Uva Rara, Barbera, Croatina, Pinot Nero and Riesling Renano. Just like the grapes each do their part, the farmers are always credited on the back label with their winery name and province. Although the mood is fun and the concept ‘more is more’, this is serious natural juice.
2022 Jean-Paul Brun Beaujolais Blanc, Beaujolais, France $23.99
Jean-Paul Brun’ makes serious Beaujolais. His Blanc boasts a palate full of pear, apple and lemon flavors with subtle hints of spring flowers. No butter or toast in this unoaked Chardonnay: it is all about freshness and discretion. This wine becomes more honeyed as it matures, but is always lip-smacking and delicious. Pair with cheeses, white fish or poultry.
2022 Jean-Paul L'Ancien Beaujolais, France $22.99
Made from Jean-Paul's oldest vines, which grow in tighter bunches with fewer and smaller, thicker-skinned berries, yielding more concentrated flavor. The grapes are harvested late with a naturally high sugar level. The wine is vinified using traditional Burgundy techniques. Deeply colored with rich red-fruit aroma and flavor and soft tannins.
Jean-Paul is a very traditional winemaker who makes food-friendly wines of serious note at Domaine Terres Dorees. There is great complexity and concentration, along with the juicy fruit associated with Beaujolais, in his wines. He achieves this with minimum intervention and steers clear of manipulating the wines via carbon maceration, thermo-vinification and yeast inoculation which have become the norm in Beaujolais. He also believes his wines taste better at lower alcohol levels so does not add extra sugar (chapitalise) to raise alcohol levels.
2022 Raphet Bourgogne Passetoutgrain. Burgundy, France $24.99
A selection of fruit from estate-owned vineyards in and around Morey-Saint-Denis and the greater Côte de Nuits. Vine age 30 years, on average. Destemmed; fermented on indigenous yeasts in tank; aged in older French oak barrels. Unfined and unfiltered.
Blend: 50% Pinot Noir, 50% Gamay.
