"At Savio Soares Selections much is still linked to my childhood dining table in Brazil, for the selection process begins with the selecting of the producer. We work with small vignerons whose philosophy is a philosophy of life, not just a branded practice. They are family-run estates who respect the biodiversity of the land, many worked the same soils of their land for generations and either continued the traditions of natural methods or converted anew from the harmful practices of their predecessors. They are families with vibrantly healthy, often overgrown yet personally tended vines. They wish no harm to the life around them and promote harmony in their daily lives as well."


NV Christian Etienne Meurville Brut Champagne, France $48.99
Christian Etienne has been handcrafting different Champagne cuvees on his nine hectacre plot in the town of Aube where the chalk and limestone soils are ideal for producing top notch Champagne. This offering, is as blend of mostly Pinot Noir, with the classic Champagne nose, terrific body weight, elegant mousse, and long finish. Could be served as an aperitif or would pair well with a variety of foods.


2021 Folias de Baco Uivo Pet Nat Blanc de Noir Rose, Portugal $27.99
Varietals: Pinot Noir
Farming: Organic, Unfined/Unfiltered
Delicate floral and timid strawberry notes are met with flint and cherry, producing a lively yet airy style of sparkling Pinot Noir. With a graceful perlage, this rosé shines and begs to be poured.
Hand-harvested. Whole cluster pressing with no time on skins. Fermentation takes place in stainless steel (10000L) with wild yeasts for roughly three weeks under temperature control. Bottled after first fermentation. No dosage. Not fined or filtered.


2018 La Morella Timorasso, Piedmont, Italy  $29.99
The Timorasso from la Morella is a round and profound white. Great structure, so much so that it perfectly pairs with white meat dished.
In this vintage we find notes of honey, maple syrup and refreshing herbal notes.


NV Duport  "Celine" Vin de France Blanc, France $19.99
2020 - 40% Chardonnay. 40% Gamay, 20% Mondeuse The color here is a deep rhubarb. The nose is a pungent display of wild fruits - blackberry, cherry, and blueberry. On the palate, the wine has flavors of ripe red currants, small plums, and a touch of zingy citrus. A minerally core adds dimension to a fruity, juicy mouthfeel. The wine is fermented naturally, spending 3 weeks in stainless steel tanks.

2020 Domaine Pierre Richard "Hermetique" Trousseau Sans Soufre, Jura, France $32.99
Predominently grown on gravely clay-limestone on marl soils, these 30 year old vines are undergo selective harvesting at the end of August and beginning of September. Whole-clusters are macerated for four weeks in stainless steel followed by spontaneous fermentation that lasts four weeks with temperature control. Aged for five months before release.


2020 Chateau Cambon Beaujolais, France $25.99
From vineyards located between Morgon and Fleurie, this is an unfiltered, unchaptalized, unfined, unsulphured wine that is a pure expression of Gamay fruit. Behind its deep red-purple color, this wine presents inviting and complex aromas of cherry-like fruit with earthy notes. A touch rustic, the palate is fresh and juicy, with red cherry fruit enhanced by a great acidity.


2021 Franck Balthazar Cotes du Rhone, Rhone Valley, France $26.99
Franck Balthazar possesses not only acclaimed skill in winemaking, but has also inherited a nearly 100-year-old parcel formerly owned by Noël Verset, retired Cornas icon. With those advantages, is it any wonder his wines are outstanding?
This Côtes du Rhone contains 60% syrah and 40% grenache sourced from three organically farmed hectares Franck has acquired, located next to Vinsobres dans la Drome. A classic expression, it is full bodied and plush with smooth, restrained tannins, hints of savory leather, and floral violets. Organically grown, low-intervention/natural wine, vegan.
