NV Guiborat `Prohibition` Blanc De Noir (Pinot Meunier), Champagne, France $67.99

2021 Guiborat `Tethys` Blanc De Blancs Grand Cru Extra Brut, Champagne, France $65.99
Champagne Guiborat’s Blanc de Blancs “Tethys” Extra Brut Grand Cru NV, based on the 2021 vintage, is a captivating expression of pure Chardonnay from the Grand Cru vineyards of the Côte des Blancs, with particular focus on Cramant and Chouilly. Known for their dedication to terroir, Guiborat crafts “Tethys” to embody the minerality and finesse of these renowned chalky soils. Vinified in the Extra Brut style, with minimal dosage, this Champagne highlights the natural vibrancy of the 2021 vintage, showcasing both freshness and structure.

On the nose, “Tethys” opens with notes of lemon zest, white flowers, and green apple, interwoven with chalky, stony undertones that speak to its Côte des Blancs origins. The palate is lively and precise, featuring flavors of citrus, crisp pear, and a touch of almond. The Extra Brut dosage enhances its clean, mineral-driven profile, while a fine, persistent mousse adds elegance and depth to the wine’s structure.


NV Laherte Freres Blanc De Blancs Brut Nature, Champagne, France $70.99
"Our Blanc de Blancs is made with our best parcels on the south slopes of Epernay. This is a perfect representation of the purity and energy coming from this area and the complexity of old vines of Chardonnay." Most of the vines are around 35 years old. 50% of reserve wines from previous vintages aged in barrels on lees are included. The grapes are hand harvested and traditionally pressed. Primary fermentation takes place in small foudres and barrels with a few battonages. Partial malolactic is used with aging on the fine lees. Disgorgement is by hand with no dosage. There is a pleasing depth of citrus and apple fruitiness, along with hints of dried mango and preserved ginger; this wine is really all about soil and expression of place.

ABOUT THIS PRODUCER

Jean-Baptiste Laherte set up the family estate in 1889, planting most of the vines in the village of Chavost, which was to become Chavot. The estate gradually grew over generations, and covers today over 11 hectares through the Champagne region. The sixth and seventh generations are now working together to create wines that are just like them - pure, sincere and authentic. 


NV Laherte Freres Extra Brut Ultradition, Champagne, France $66.99
Registered as Negociants but truly a family business, the Laherte Brothers biodynamically farm about 75 parcels growing all seven grape varieties allowed to make ancient and new style Champagne. Their ‘maison’ style is wonderfully earthy and mineral. The Ultradition is a blend of 60% Pinot Meunier, 30% Chardonnay, and 10% Pinot Noir and offers a rich earthy texture, lemon peel notes and extended minerality on the finish. Perfect for when you want to feel like you are in France but are stuck at home.


NV Laherte Freres Nature De Craie Prem Cru, Champagne, France $98.99
From organically grown 30-60 year old vines in the villages of Vertus and Voipreux in the Côte des Blancs. The vineyards are located in the lower mid-slopes where the chalk is at its most prominent, capped off with a few cm of clay. No added sulfur was used during the vinification or aging of this wine and no sugar was added during the vinification or at disgorgement. It is 100% free-run Chardonnay juice. Barrel Aged and barrel fermented, and indigenous yeast fermented.

Laherte’s goal is to express the clearest and finest grain of chalk, and the results here are clear and concise. Rich in the middle, but supported by a mineral backbone, this wine is sublime young, due to its richness and complexity, but will develop more layers over time.

Under Aurélien's leadership, Laherte Freres has begun to produce a series of single vineyard and single vintage cuvées vinified in Burgundy barrels without malolactic fermentation and bottled without fining or filtration.
