NV The Eyrie Vineyards "Spark" Sparkling Rose Ultra Brut, Willamette Valley, Oregon $27.99
Medium to deep cherry-pink in color, it has aromas of cantaloupe, strawberries, raspberries and lemon peel with notes of stone and toast. The palate is dry with citrus and red berry flavors, spritely mousse and a refreshing, mineral-driven finish. - Wine Advocate
To create this wine, Jason blended vintages of Pinot noir fruit (48%), Pinot Meunier (6%), Chardonnay (9%), Pinot Blanc (5%) and Chasselas doré (31%). Fermentation and aging occurred in a mixture of wood barrels and stainless steel. Full malo and an average of 11 months on lees lend a subtle richness with zero residual sugar. The final step: Jason had the wine carbonated to 4.2 atmospheres of pressure and bottled under crown cap.
2022 Ovum "Big Salt", Willamette Valley, Oregon $22.99
Big Salt is a white wine that embodies a day at the beach. It's bright, fresh, dry and a bit salty (although no salt is added of course!) - once it's done you're left wanting more. We achieve this experience by letting mother nature create complexity - that is to say we allow all of the grapes to ferment together, with native yeast..rather than making a blend in the laboratory. Finding the right vineyards throughout Oregon that share the same cool climate is what it's all about. Sustainable and Organic vineyards throughout Oregon are the building blocks for Big Salt.
2022 Big Salt is dry, and very aromatic. Notes of lemon curd, orange blossom and ripe Bartlett pear leap ouf of the glass. The palate is racy and fun, and continues to have it's classic, salty finish.
2021 The Eyrie Vineyards Chasselas Dore, Willamette Valley, Oregon $37.99
This wine is made from 12 rows of ungrafted vines in our Sisters Vineyard. Viticulture at all
of the estate vineyards is certified organic. In addition we practice regenerative no-till farming, with strict attention paid not just to the vines but to the healthy networks of soil organisms that support them. Not only does this approach avoid the need for artificial irrigation, it also nourishes the vines without the need for additional fertilizer, and captures atmospheric carbon. In the winery, we refrain from unnecessarily manipulating the wines during their fermentation and maturation, allowing them to reflect the vintage. The 2021 vintage aged 11 months on lees. With full natural malolactic fermentation, the wine is crisp and focused with plenty of richness to carry the low alcohol level natural to the grape.
2019 The Eyrie Vineyards Trousseau Noir, Dundee Hills, Willamette Valley, Oregon $42.99
2019 was perhaps the most “Burgundian” autumn yet. Typically the Willamette Valley features wet winters and dry summers, whereas Burgundy distributes its rain evenly throughout the year. In 2019 we had a more Burgundian pattern, with rain and cooler days scattered throughout the pre-picking period. Vines make sugar from air, sunlight, and water.
2019’s well-timed rains increased sweetness of this vintage while still retaining acidity — which led to some of the best qualities a wine can have: refreshing and food friendly when young but with superb cellar potential.
2020 The Eyrie VineyardsTrifolium, Willamette Valley, Oregon $40.99
Trifolium combines all three of the red varieties grown on Eyrie’s 5 certified-organic estate vineyards. Farming is certified organic, but Jason and his team take this only as a starting point. Viticulture at all of the Estate vineyards follows the precepts of regenerative no-till farming, with strict attention paid not just to the vines but to the healthy networks of soil organisms that support them. Not only does this approach avoid the need for artificial irrigation, it also nourishes the vines without the need for additional fertilizer, and captures atmospheric carbon.
Picked by hand, the Trifolium was destemmed and put into a variety of fermenters to undergo native primary fermentation. This unique blend is Pinot Meunier (8%), Trousseau (15%), and Pinot Noir (77%).
Our barrels are mostly neutral—for this vintage, only 17% were new. Having undergone native malolactic fermentation and aged for almost 2 years, the 2020 Trifolium was blended after 28 months, racked once without filtration, and then bottled and sealed under Diam cork.
2021 Ovum Ezy Tgr Pinot Noir, Willamette Valley, Oregon $25.99
This certified sustainable pinot noir is filled with bright red fruits like cranberry, pomegranate, and currant. The palate is elegant, silky textured, and a nice balance of red fruits with a touch of spice and brown sugar. From the same minds that brought you Big Salt and other delicious Ovum wines.
